My Top 3 is a weekly post where I count down three things I love in a random category. This week, we’re looking my top three green vegetables.
If someone told me that I would no longer be able to eat meat, I would probably just shrug. I am happy to live in the world of vegetables. Most of my lunch meal prep is vegetarian. We eat vegetarian for dinner at least once a week. When I’m eating solo, it’s almost always vegetarian. This is not because I don’t like meat, it’s because the world of vegetables has so much to offer! So many flavors and textures and uses.
Veggies are not only tasty, they are pretty to look at and fun to work with. Veggies can be the star of the show or a supporting player. You can eat them raw or cooked. And, when you’re cooking, because you don’t really have to worry about contamination, you can snack on them as you go! Working with veggies is like having a built in appetizer.
There is no way I could rank just my top three vegetables. So, I found a workaround and am only focusing on the green ones. I’ll hit the other colors of the rainbow in future newsletters. Since these veggies are so good, I included some recommended recipes for each.
