My Top 3 is a weekly post where I count down three things I love in a random category. This week, we’re looking at my top three lunch meal preps.
For about a decade, I packed the same lunch for work almost every day. A sandwich and a piece of fruit. The sandwich was usually deli turkey or chicken with a slice of cheddar and a squeeze of mustard. The fruit was often an apple or pear. Occasionally, I would bring in leftovers. Sometimes I treated myself to lunch out but, mostly, I ate lunch at my desk while perusing email.
Then I got pregnant. At that point, deli meat was on the no-no list. That’s when I found myself meal prepping. On weekday mornings, I don’t want to think. I want a lunch I can grab, zip up in my bag, and go. Meal prep was the perfect solution. I could make it on the weekend, portion the recipe into Tupperware, and have everything set for the week. I usually get three lunches out of one meal prep. That lets me still mix in dinner leftovers and the occasionally treat of a lunch out.
I like meal prepping because it consolidates my work, fits in my work bag, makes my mornings feel less rushed, and gives me some pretty tasty meals to look forward to.
